Instructions
Place tater tots in a single layer on a rimmed large baking sheet. Bake tater tots according to package directions. Leave your oven on after the tater tots have finished cooking.
While the tater tots are baking, heat a large skillet over medium heat. Cook the ground beef and diced onion until the ground beef is no longer pink. Drain if necessary, though you may not need to if using lean ground beef
Stir the taco seasoning and ¼ cup water into the cooked ground beef mixture. When the tater tots have finished baking, spread the ground beef in an even layer over the cooked tater tots.
Place the nacho cheese sauce is a microwave safe bowl and microwave for 45 seconds-1 minute or until the cheese is warmed and pours easily. Drizzle the nacho cheese sauce over the ground beef and sprinkle with the shredded pepper jack cheese.
Bake for 10 minutes or until the cheese melts.
Top with diced tomatoes, sliced black olives, sour cream, salsa, and sliced jalapeños before serving.
If you prefer extra crispy tater tots feel free to stir them once while baking and/or broil them for 5 minutes or so after they have cooked and before you add any of the toppings.
You can also broil the cheese for a bit at the end if you would like it to brown up a bit before serving.
