Roast Beef Roll Ups with Horseradish Cream Sauce are perfect for a hearty lunch or as a meal on the go! Use leftover pot roast or deli roast beef.

Ingredients
Horseradish Cream Sauce
¼cupnonfat Greek yogurt
2Tablespoonsmayonnaise
⅛teaspoongrated horseradish
For the roast beef Wrap
4 12" flour tortillas
¾pounddeli roast beef
½cupshredded cheddar cheese
lettuce leaves
Instructions
Slightly warm tortillas so they're pliable.
Lay flat and spread with horseradish cream sauce. Add lettuce, cheese and sliced roast beef to each wrap.
Wrap by folding the sides in and then rolling, burrito style until closed.
Substituions
Tortillas - substituting a whole grain tortilla or a low-carb variety. Or, go crazy and make your own tortillas. We all seem to be baking up a storm these days!
Horseradish - this isn’t everyone’s cuppa tea. Omit if that’s your preference, or your family members preference.
Lettuce - use any type of lettuce, mixed greens or baby spinach
