Ingredients
To make the dressing:
2Tablespoonslime juice
2teaspooncumin
1teaspoonchili powder
¾cupolive oil
salt & pepper to taste
Salad Ingredients:
3cupsfrozen or fresh corn kernels
2cupsgrape tomatoeshalved
¼cupred oniondiced
¼cupcilantrochopped
¼cupfeta cheese crumbles
Instructions
Make the Dressing:
In a bowl, whisk the dressing ingredients (lime juice, cumin, chili powder and olive oil). Taste and adjust seasoning with a little salt and pepper)
To Make the Salad
Heat a skillet over medium high heat. Add corn to the skillet and allow to cook, charring slightly, turning occasionally.
Remove corn from skillet and place in a large bowl. Add remaining salad ingredients (tomato, onion, cilantro, feta and dressing). Toss to coat.Serve and enjoy!
Variations:
Use fresh sweet corn and lightly char it on the grill before cutting off the kernels.
Substitute another fresh herb for the cilantro, such as flat leaf parsley
