Easy Cucumber Tomato Salad

Cool and crispy, Cucumber Tomato Salad is easy to prepare for weeknight meals or summer parties. Make a batch as a healthy side dish!

Ingredients

tablespoon
olive oil

tablespoon
lemon juice
½
teaspoon
salt

cups
grape tomatoes, halved
1
large
English Cucumber or 1 regular cucumber, peeled
1
tablespoon
fresh dill
Instructions
In a small bowl, whisk together olive oil, lemon juice, and salt. Set aside.
In a serving bowl, add halved grape tomatoes.
Prepare cucumber by cutting in half lengthwise. Cut each half into slices, half moon shaped. Add to the tomatoes.
Pour dressing mixture over salad. Add chopped dill. Toss lightly to combine.
Allow to sit for at least 10-15 minutes for flavors to melt.
Serve and enjoy!
