Ingredients
FOR COOKED EGGS
6eggs
nonstick cooking spray
salt & pepper
FOR SANDWICHES
6English muffins
6slicescheddaror cheese of choice
cooked bacon, sausage patty or deli style ham
Instructions
TO COOK EGGS
Preheat oven to 350 degrees. Spray a whoopie pie pan with nonstick cooking spray.
Break eggs, one at a time, into a bowl and transfer to pan slots.
Pierce each yolk with a knife to allow yolk to spread. Then season with salt and pepper. Use a butter knife or rubber spatula to run around each egg.
TO ASSEMBLE SANDWICHES
Toast English Muffins. Add slice of cheese, meat of choice and egg circle.
Sandwiches can be made ahead of time and refrigerated. Heat for approximately 30 seconds in the microwave, depending on your wattage.To freeze sandwiches, wrap individually with waxed paper or plastic wrap. Thaw in refrigerator overnight OR defrost egg separately in the microwave, then reassemble sandwich and reheat.
