Lemon grilled chicken with greek yogurt sauce, or tzaziki, is a healthy weeknight dinner and a lunch meal prep idea. Make into kabobs or top a salad!

Ingredients
FOR THE CHICKEN
½cuponions, thinly sliced
1tablespoonolive oil
2teaspoonlemon juice
2teaspoondried parsley
½teaspoondried oregano
1lbboneless, skinless, chicken breast
FOR THE GREEK YOGURT SAUCE
1cucumber, seeded, peeled and grated
1cupplain low-fat Greek yogurt
2teaspoonlemon juice
1tablespoondried dill
1teaspoonminced garlic
salt and pepper, to taste
Instructions
TO MAKE THE CHICKEN
Combine all ingredients in a gallon sized, ziplock bag. Marinate in the refrigerator for three hours, turning occassionally.
To cook, remove from food bag and grill until an internal temperature reaches 165 degrees.
TO MAKE THE GREEK YOGURT SAUCE
Grate the cucumber, then put into a paper towel or clean kitchen towel to remove excess water.
Combine all ingredients in a small bowl, Stir to blend and let sit in the refrigerator for at least 30 minutes before serving.
