Ingredients
1tablespoonolive oil
8small red potatoes, diced
salt & pepper to taste
8eggs
1poundbreakfast sausage
1green pepper
½smallonion, diced
1.5cupsshredded cheddar cheese
Instructions
Preheat oven to 375 degrees F. Toss potatoes with a little olive oil and seasoning with salt and pepper. Transfer to a rimmed baking sheet. Cook for 15-20 minutes or until browned slightly and fork tender. When cooked, remove from oven and transfer to desired number of bowls.
Heat a medium skillet over med-high heat. Add onions and green peppers in a single layer and cook until softened. Remove ingredients and divide into bowls.
Cook breakfast sausage, breaking into bite size pieces as it cooked. When cooked, remove and add into the bowls with the potatoes and vegetables, dividing equally.
In a medium bowl, whisk eggs until well blended. Cook until just set. Remove and add to bowls.
Sprinkle cheddar cheese over the top of each portion.
Cool, cover and place in the fridge or label and freeze for later.
To reheat from refrigerated, microwave for 30-60 seconds.
To reheat from frozen, defrost for 1-2 minutes, then heat in the microwave for 30 seconds or until heated through.
