Ingredients
2largeapplesGranny Smith or other favorite
1 ½cupssemi sweet chocolate chips
1 ½Tablespoonscoconut oil
Instructions
Wash apples and pat dry with a paper towel. Use an apple corer to remove the core. Slice apple into ⅛" slices horizontally. (Like donuts)
Place chocolate chips and coconut oil in a medium sized microwave safe bowl (I use a cereal bowl). Microwave the chocolate chips 20 seconds at a time and stir the chocolate in between, until the chocolate has melted and is completely smooth.
Pat the apple slices dry with a paper towel. Dip slices into the chocolate, flipping to cover with both sides. Use a butter knife or back of the spoon to lift the apple rounds from the chocolate and let excess chocolate drip back into the bowl. As you lift the apple slices out, drag an edge against the side of the bowl to remove excess chocolate. Place on a parchment paper covered baking sheet.Repeat with remaining apples.
Place apples in the refrigerator for 30 minutes, or place in a freezer for 10-15 minutes until chocolate is set.
Substituions: Honeycrisp, gala, fuji and pink lady are all apple varieties that work well in this recipe.Milk chocolate chips can be substituted for a sweeter version. You can also use a blend of chocolate chip varieties.Store in refrigerator until ready to eat.
