Ingredients
12ouncesfresh Brussels sprouts
1Tablespoonolive oil
1Tablespoonbalsamic vinegar
3Tablespoongrated parmesan
Salt and black pepper to taste
Instructions
To smash the Brussels Sprout, you need to microwave them. In a large microwave-safe bowl, place the uncooked Brussels sprouts add ¼ cup of water, and cook for 4 minutes at high temperature.
Remove for the microwave and let them cool for 5 to 10 minutes. Place the Brussel Sprout on a cutting board, and with the bottom of a flat pan, give the sprouts a little smash. You can also use a flat pancake turner, but I find the pan to be very effective (and therapeutic).
Place the smashed Brussels sprouts in a large bowl. Add the olive oil, balsamic vinegar, grated parmesan, salt, and pepper.
Mix gently until the Brussels sprouts are well coated.
Place in the air fryer basket in a single layer. Cook for 6 minutes at 400˚F, flipping them halfway by shaking the basket or using tongs.
No microwave? You can briefly steam the Brussels sprouts in the water on the stove top.Skip step 1 if you have steam in bag brussels sprouts. Follow the package directions. To store leftovers: You can keep the Brussels sprout in an airtight container in a fridge for up to 4 days. Do not freeze. You can serve these as an appetizer or side dish.If you like a spicier flavor, you can add a pinch of red pepper flakes to give it a kick!
