Chocolate covered dates with peanut butter are a rich, chocolatey sweet treat you can indulge in without the guilt. If you're looking for a better alternative for a delicious dessert, this is for you!

Ingredients
12large Medjool Datespitted
½cupcreamy peanut butter
¾cupsemi-sweet chocolate chunks or chocolate chips
1teaspooncoconut oil
2Tablespoonschopped peanuts
Instructions
Line a sheet pan with a piece of parchment paper. Cut a large slit into the dates with a sharp knife. Take care not to cut them completely in half, but opening up the inside pocket. Remove the pit (if your dates are not pitted).
Stuff dates with a generous teaspoon of peanut butter inside each. Set aside.
Melt the chocolate and coconut oil in a microwave safe bowl in the microwave at 15 to 30 second intervals. Stir well at each increment, until the chocolate is smooth and melted (depending on your microwave, it may be up to 1 and a half minutes.)
Place 1 date at a time in the bowl of chocolate and use a spoon to completely coat it in chocolate. Remove from the chocolate and let the excess chocolate drip back into the bowl (I like to use a fork for this so the extra drips between the tines of the fork. Place each chocolate coated date on your parchment lined tray.
Sprinkle the chopped peanuts over the top of the dates while the chocolate is still runny.
Let chill in the fridge for about 5 minutes for the chocolate to harden.
You may need more or less chocolate and peanut butter depending on the size of your dates.
