Ingredients
10ouncesfresh chopped kaletough stems removed
2medium applescored and diced
2red pearsdiced
½cupchopped pecans
½cupdried cranberries
¼cupfinely diced red onion
4ouncesgoat cheesediced
For the vinaigrette
¼cupextra virgin olive oil
2Tablespoonsapple cider vinegar
1Tablespoonprepared yellow mustard
1Tablespoonhoney
¼teaspoonfine sea salt
¼teaspoonground black pepper
Instructions
Place the chopped kale in a large mixing bowl. Top with the apples, pears, pecans, red onion, dried cranberries, and goat cheese. Gently toss.
Add the vinaigrette ingredients to a mason jar or other jar with a lid. Shake to combine.
Drizzle the vinaigrette over the salad right before serving or dress individual servings.
