Weekly Meal Plan

This is our real time weekly meal plan, meaning this is what we’re actually eating this week. Want to eat along? Let’s go!

Monday: Slow Cooker Red Beans & Rice from A Pinch of Healthy {Slow Cooker, Healthy, Easy}

Tuesday: Taco Tuesday

Wednesday: Spaghetti with Ricotta, Lemon and Spinach from {Simple, FAST! Vegetarian}

Thursday: Sheet Pan Baked Parmesan Pork Chops from Wholesome

Friday: Flounder Piccata from Skinnytaste {Meatless, Healthy, Weight-Watchers Friendly}

Saturday: I’m going to hit up Ryan for dinner out – after all, I just cooked all week!

Sunday: Chef’s Choice (leftovers, or a freezer meal most likely.)

Weekly Meal Plan – Week 4

Monday: When I’m doing our weekly meal plan, I usually try to do meatless Monday, but this week we have LOADS of meetings. Slow Cooker to the rescue with this Red Beans and Rice! This weekend I grocery shopped at Aldi and they didn’t have dried red beans and I was too tired (okay, lazy) to go to another store for beans, so I’m subbing in some rinsed canned beans. Also, you know how much I love a steamable bag of rice, so microwave to the rescue!

Tuesday: Taco Tuesday, of course!  We’re doing ground beef tacos with all the fixings which seems to make everyone happy.  I make my own taco seasoning which is lower in sodium and is probably made with spices you already have in your cabinet. Plus, no funky fillers. Ole!

Wednesday: My most dreaded day of the week (just keeping it real, here!) On this day, we are running in five hundred different directions and by the time I get home at 6:30 we need something easy and FAST! This Spaghetti with Ricotta, Lemon and Spinach will only take you as long as needed to boil a pot of pasta and has 5 INGREDIENTS (plus salt, pepper and olive oil but you get the idea). This one is tasty, too!

Thursday: Why do I love this recipe for Sheet Pan Baked Parmesan Pork Chops? One dish, baby! Actually, it makes our kids happy because we’ve been putting them to work in the kitchen and this type of dinner equals fewer dishes for them to wash. Again, a substitution…no asparagus at the grocery store so fresh green beans are pinch hitting here. I love sheet pan dinners – it’s so easy to throw something in the oven and walk away! I like the cookbook below if you’re looking for inspiration.

Friday: Flounder Piccata – I’ve tried the chicken version of this and loved it! I’m working to expand our palates around here so I’m hoping they’ll try this dish with an open mind (we aren’t big fish eaters). To be honest, I’m fully expecting them to turn up their noses, except our 20-month-old. He’ll eat ANYTHING! I’m using frozen flounder filets. Any ideas of what side I should pair with this fish dish?
