Here’s your weekly meal plan – Week 3! A day late, but you know what they say…

Monday: Breakfast for Dinner (make extra bacon for salad night) {Family Friendly, Quick}

Weekly Meal Plan – Week 3

Monday: Alright, let’s start with every busy person’s go-to. Breakfast for dinner! Our is usually pancakes, scrambled eggs, and bacon. Cook some extra bacon for the Chicken Salad later in the week.

I like to cook the bacon in the oven for easier cleanup. I’ve been following The Pioneer Woman’s method for several years. Her tips:

  • Cook the bacon on a parchment lined pan at 400 degrees (or 350 if using thick cut bacon)
  • Cook 10-15 minutes and watch closely at the end. The bacon can go from almost done to overdone very quickly.

Tuesday: If you like Mexican food, you’ll love this casserole! Save yourself time and buy precut butternut squash in the produce department. I happen to have some in my freezer I’m using up still (thanks Uncle Ron!)

Wednesday: My favorite salad – possibly EVER! I don’t know that we can call this healthy, but there are certainly worse things you could eat! The salad dressing is incredibly good – even if you don’t think you like honey mustard, give it a try! Use the leftover bacon from Monday’s dinner and cook with chicken cutlets for a faster dinner time.

Friday: This is corned beef that cooks in beer. Do I need to say anything more?? Didn’t think so!

Sunday: This recipe has one of my favorite recipe traits – easy clean-up! The kids will like it, leftovers freeze well and it’s easy to make. Using frozen, steamable brown rice will save you time and an extra step – I’ve seen it as low as $0.88 at the grocery store. Money well spent, in my opinion!
