Minestrone Soup - *Time-saving tip - if your family will eat beans, save yourself a step and skip the pureeing of the beans.
To make garlic breadsticks, purchase already prepared breadsticks (I like the ones in the bakery section of the grocery store). Warm them for several minutes in a 300-degree oven. Remove, brush with melted butter and sprinkle with garlic salt. BAM! Garlic breadsticks that will make you think you're dining at Olive Garden.
French Dip Sandwiches - I didn't cut the meat as small as called for and still had great results. I also didn't butter the buns as called for but gave them a quick toast under the broiler. Leftovers will freeze well!
Jambalaya - My Midwestern take on jambalaya. Save yourself some time and chop the ingredients ahead of time.
Spinach & Sausage Gnocchi - This is on regular rotation in our house, even when we're in the field. If you need a quick dinner, skip the step of browning the onion and add a ½ teaspoon of onion powder instead.
30 Minute Loaded Taco Skillet - You all know I love saving on the dishes to be washed! This meal is made in one pan and has everything you need for a healthy dinner - lean protein, veggies, and it's also low-carb if that's your thing.
