Grab your favorite skillet and heat it up! Brown ground beef, breaking into chunks. Drain excess fat. Add taco seasoning and stir in.
Add cream cheese, rotel, and beans. Stir everything together until the cream cheese is melted and combined with the beans and beef.
Preheat oven to 375°F. Spread the ground beef mixture evenly an oven safe baking dish. You can make it up to this point and refrigerate if you want to prep it ahead of time!
Top with frito corn chips (or nacho cheese doritos, no judging here!) If it's delicious, you can add it. Tortilla chips work, too!
top with Mexican cheese blend this cheese usually blend has monterey jack, cheddar and asadero and queso quesadilla cheese.
Then, bake it for about 15 minutes in the oven until it’s heated through and the cheese is melted.
- Drain the rotel and beans so they don’t make the dish too soupy. - this is a great recipe to gift to a family with a new baby! - it's also perfect for leftover taco meat
