Italian white bean soup

Rich and creamy, this Italian White Bean Soup is easy to make but is big on flavor.   Warm up with a bowl of this cozy soup served with fresh crusty bread - yum!

Ingredients

onion

italian sausage

heavy cream

garlic

bay leaf

rosemary

spinach

carrots

chicken broth

white beans

olive oil

celery

Step 1

brown italian sausage

variation

you can use regular italian sausage or make it spicy. it's your call!

Step 2

soften vegetables

soften veggies

Add oil, onions, carrots and celery. Cook until they’ve begun to soften, then add the garlic and let it cook for just a minute.

Step 3

make the broth

everything in!

Add the chicken stock, cooked sausage, white beans, rosemary and bay leaf. Use a wooden spoon to scrape those brown bits at the bottom!

Step 4

finish it off

add the cream & spinach

The heat from the soup will easily wilt the spinach. Give everything a nice stir to incorporate it.

Serve with crusty fresh bread and some freshly cracked black pepper. A little sprinkle of grated Parmesan cheese would be lovely, too!
