Make a spice blend using salt, paprika (any kind you like), lemon pepper and onion powder. Stir everything to combine.

Pat the chicken breasts dry with paper towels. Add the spice blend to both sides of the chicken breast.

Pierce each chicken breast several times with a fork. It helps the seasonings sink into the meat as it cooks!

Add the seasoned chicken to your instant pot. I used a 6 quart and the 3 pieces of chicken fit in perfectly!

Add some chicken broth and some of your favorite bbq sauce. We love Sweet Baby Rays and Stubbs! Save a bit for finishing off the chicken.

Cook for 10 minutes following by a 15 minute rest. Then, shred the chicken and return to the sauce. Give it all a stir.

Serve the shredded chicken on buns with more bbq sauce, or use it to top salads, add to quesadillas and more!
