5 Easy Farm Meals Using Epicure

I think we can agree that farm meals need to be easy to make and portable, which is why you’ll love these shortcut handheld field meal ideas using Epicure!

I partnered with Epicure this year because while I can’t roam from coast to coast making meals for people, I CAN provide easy meal ideas! And these meals are all ready for your slow cooker or prepared in your kitchen in under 20 minutes.

I can stand behind that, friends!

So whether you’re planting, baling or in the middle of harvest, here are some meal plans that you can keep on standby for you or your farmer’s busy season.

Easy Farm Meals

  1. Pulled Pork Sandwiches – You only need five minutes to prep this pulled pork main dish. Use this pulled pork mix to make easy sandwiches. This recipe makes five pounds of mouthwatering pulled pork!

Ingredients needed: pulled pork seasoning, ketchup, vinegar, brown sugar and of course, boneless pork shoulder or pork butt roast.

Use the leftovers to make pulled pork quesadillas, Instant Pot baked potatoes topped with pork, or Pulled Pork Bahn Mi sandwiches!

Pair with creamy potato salad or coleslaw.

2. Classic Meatloaf – Use the classic meatloaf mix to make meatloaf muffins or make a regular meatloaf to make meatloaf sandwiches on bread. If you use the Epicure rectangle steamer you can make meatloaf in the microwave in only a few minutes and of course, we all have our trusty ovens.

Game changer!

If you need more info on how to make Muffin Tin Meatloaf you can see my recipe, as always!

Ingredients needed: ketchup, brown sugar, honey mustard, egg, lean ground beef, meatloaf seasoning

3. Sloppy Joe Sandwiches – I love making my own sloppy joes, of course. But when our busy season hits I’ll take every shortcut I can. Sanity is key!

Leftover sloppy joes are awesome on top of baked sweet potatoes, or made into a super cheesy quesadilla, too!

Ingredients needed: lean ground beef, tomato paste and buns of choice, Sloppy Joe Seasoning.

Serve with old fashioned baked beans.

4. Crispy & Crunchy Lettuce Wraps – we know lettuce wraps aren’t really the most field friendly, but just like a pregnant me could dive into an order of Nachos Bell Grande while safely driving, where there’s a will there’s a way!

Swap out the lettuce leaves for your tortillas of choice to make this delicious farm meal made with ground pork. Again, this is a super easy and healthy meal to keep on hand when you can’t run to the grocery store!

Ingredients needed: bell peppers, wrap or tortilla of choice, crispy & crunchy lettuce wrap seasoning, ground pork, sesame oil, soy sauce.

Toppings (optional): sriracha or hoisin sauce

5. Beef & Broccoli – If you don’t have time to make Slow Cooker Beef & Broccoli from scratch, you can make it using Epicure’s Beef & Broccoli Stir Fry seasoning.

Stir fries and Asian foods are one of my go-to’s for field meals. I know, it sounds weird, but bear with me.

When you think of it, a bowl of rice topped with stir fry has everything in one bowl! It has your protein, flavoring plus your vegetables.

It’s one of those dishes that will keep the crew or family happy without requiring an after meal nap. Because we all know, farm life keeps on moving!

Ingredients needed: beef cut into strips (I’ve used round steak and sirloin for this), fresh or frozen broccoli, beef & broccoli stir fry seasoning, soy sauce and oil.

That’s all!
