Lemon grilled chicken with greek yogurt sauce, or tzaziki, is a healthy weeknight dinner and a lunch meal prep idea. Make into kabobs or top a salad!
Ingredients
FOR THE CHICKEN
- ½ cup onions, thinly sliced
- 1 tablespoon olive oil
- 2 teaspoon lemon juice
- 2 teaspoon dried parsley
- ½ teaspoon dried oregano
- 1 lb boneless, skinless, chicken breast
FOR THE GREEK YOGURT SAUCE
- 1 cucumber, seeded, peeled and grated
- 1 cup plain low-fat Greek yogurt
- 2 teaspoon lemon juice
- 1 tablespoon dried dill
- 1 teaspoon minced garlic
- salt and pepper, to taste
Instructions
TO MAKE THE CHICKEN
- Combine all ingredients in a gallon sized, ziplock bag. Marinate in the refrigerator for three hours, turning occassionally.
- To cook, remove from food bag and grill until an internal temperature reaches 165 degrees.
TO MAKE THE GREEK YOGURT SAUCE
- Grate the cucumber, then put into a paper towel or clean kitchen towel to remove excess water.
- Combine all ingredients in a small bowl, Stir to blend and let sit in the refrigerator for at least 30 minutes before serving.
Notes
This chicken can also be baked in the oven or cooked on a stovetop until the chicken reaches a temperature of 165 degrees.
This also makes a wonderful kabob marinade.
