Ingredients

FOR THE CHICKEN

  • 1/2 cup onions, thinly sliced
  • 1 Tbsp olive oil
  • 2 tsp lemon juice
  • 2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1 lb boneless, skinless, chicken breast

FOR THE GREEK YOGURT SAUCE

  • 1 cucumber, seeded, peeled and grated
  • 1 cup plain low-fat Greek yogurt
  • 2 tsp lemon juice
  • 1 Tbsp dried dill
  • 1 tsp minced garlic
  • salt and pepper, to taste

Instructions

TO MAKE THE CHICKEN

  • Combine all ingredients in a gallon sized, ziplock bag. Marinate in the refrigerator for three hours, turning occassionally.
  • To cook, remove from food bag and grill until an internal temperature reaches 165 degrees.

TO MAKE THE GREEK YOGURT SAUCE

  • Grate the cucumber, then put into a paper towel or clean kitchen towel to remove excess water.
  • Combine all ingredients in a small bowl, Stir to blend and let sit in the refrigerator for at least 30 minutes before serving.

Notes

This chicken can also be baked in the oven or cooked on a stovetop until the chicken reaches a temperature of 165 degrees.
This also makes a wonderful kabob marinade.
