Make Ahead Breakfast is my kind of meal. I’m not a morning person and it takes a bit for the coffee to kick in. That’s when these bad boys come into play.
Our two year old is sleeping in at 9 am this morning. Not a real shocker considering he was partying his way through the 3 am hour. He’s a real party animal, that guy.
While I have a little peace and quiet, I’ve rounded up some (mostly) healthy make ahead breakfasts for you and your family. A little birdie specially requested chocolate chips so I included some of those, too!
Freezer Friendly Make Ahead Breakfast
Chunky Monkey Breakfast Oatmeal Cups – These have protein from the egg, are whole grain AND have some chocolate. Grab one and go in the morning! Make a double batch and freeze and you’ll be set.
Sweet and Savory Oatmeal Bake – I give credit to my Mom for finding this one. She baked these up for me after our youngest was born. We wrapped them individually and had delicious, warm breakfast for weeks. I can personally attest to the yummy factor on this one. Customize however you like!
Healthy Zucchini Muffins with Chocolate Chips – I’ve been following this blogger for some time and Erin always has delicious recipes! These are made with honey, whole wheat flour and banana. And zucchini, obviously. Make some to eat and stash the rest in the freezer. Thaw overnight.
Sausage, Egg, Potato Breakfast Bowls – Shameless plug, this is what I make for our family. They love ’em! Think of this as a road map more than a recipe – you can make them with whatever you have in your kitchen.
Make Ahead Breakfast – Baked
Apple Cinnamon Breakfast Bars – These look like a slice of cake but are actually a quick, healthy option to keep on hand all week!
Mini Muffin Pancake Bites – Customize these cuties with whatever add-ins you like. (Chocolate chips I’m talking to you). Berries and flaked coconut would be good options, too! I’m willing to bet these would freeze well if you thawed overnight to reheat.
Blueberry French Toast Casserole – Bake this on the weekend, eat it all week!
Baked French Toast Muffins – These look kind of amazing. Yes, they’re a splurge but some days, you need those! Use brioche bread if you want to change things up.
No Bake Make Ahead Breakfast
My go-to here is going to be energy bites, but I’m going to share a secret. I don’t like to eat them when they’re formed into balls. But since this is a free country I make mine into squares. Any physchologists out there want to analyze that? Anyway…

Pumpkin Energy Bites – Made these, loved these, froze the extras. Give them a try. I added chocolate chips to my last batch.
